Feeding on trout at Carencro, Louisiana

Last night was all about a quiet campsite and lighting a fire to cook on. E decided that it was time to eat simply so we broke out the piece of trout that we’d picked up in Austin, at the Wholefoods market they have there.

Our fishy friend was stuffed with pimento peppers, and garlic and lemon, wrapped in foil and placed with love on top of the wood embers to steam. With it, we wilted some red dandelion in garlic and olive oil, and then fried us some ‘sparagus with lime squeezed over it at the end.
